INGREDIENTS:
- 1 1/2 cups of graham cracker crumbs
- 1/4 cup butter, melted
- 1 1/4 cup sugar, divided
- 4 packages cream cheese, softened
- 2 teaspoon vanilla, divided
- 1 160z sour cream, divided
- 4 eggs
- 2 cups fresh fruit for toppings
DIRECTIONS:
- Preheat oven to 325 degrees
- Line a 13 by 9 pan with tin foil. Let it hang over the edges so when the cheesecake is done you can just lift it out.
- Mix crumbs and butter with 2 tablespoons of sugar
- Press into the bottom
- Beat cream cheese, 1 cup of sugar, and 1 teaspoon of vanilla
- Add 1 cup of sour cream
- Add 1 egg at a time and pour over crust.
- Bake for 40 minutes. While it is baking mix together remaining sour cream, sugar and vanilla.
- After 40 minutes carefully spread over cheesecake and bake another 10 minutes.
