Recipe #95 Banana Oatmeal Chocolate Chip Cookies

I love cookies, but they are so bad for you and you can never just have one. So I was looking online one day, not for recipes and some how on my Facebook newsfeed this recipe popped up! I was like this is prefect because it doesn't have alot of sugar and I have all the ingredients! Once I made them and tried them I loved them. They taste like mini pieces of banana bread.




Ingredients:


4 tablespoons butter, softened
1/2 cup brown sugar, packed
1/4 cup sugar
1 teaspoon vanilla
1 large egg
1 large banana, mashed
1 ¼ cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old fashioned oats
1 cup semisweet chocolate chips



Directions:

1. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

2. In a large mixing bowl, combine butter and sugars, mix until smooth. Add in vanilla extract and egg. Next, add the banana. Beat well.

3. Slowly add in flour mixture until just combined. Stir in oats and chocolate chips.

4. Drop cookie dough by teaspoons about 2 inches apart onto baking sheets sprayed with cooking spray. Once I dropped them on the cookie sheet I spread it out to make it more of a cookie shape because they don't fluff out like a normal cookie.

5. Bake at 350 degrees F for 10-15 minutes or until golden. Remove cookies from pans; cool completely on wire racks.

Recipe #94 Lemon Butter Sauce with Chicken

So I had 2 packs of chicken in my freezer and I needed to use one of them up for dinner that night. I was so sick of chicken but I needed to use it. So I searched the internet looking for something that caught my eye. While at my work they provide lunch to new staff that comes in that week so I was in the kitchen getting my lunch ready when I saw what they were having. It looked and smelled so good. I asked my co-worker what it was a she said a lemon butter chicken. I figured that would be prefect for dinner. So I continued my recipe looking for something quick and easy to make after a long day of work and I found it! Along side rice or mashed potatoes this is prefect!



INGREDIENTS:

  • 1/2 cup butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1 garlic clove
  • 1/2 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1 pound of boneless skinless chicken breast

  • DIRECTIONS:

    1. In a skillet over medium heat, combine butter, lemon juice, salt, garlic, pepper and paprika. Bring to the boil; arrange chicken in skillet and again bring to the boil. Cover skillet and simmer for 30 minutes, or until chicken is tender, turning frequently.
    Serves 4.

    Recipe #93 Baked Ziti

    I was standing in line ready to check out and I always flip through the cooking magazines while I wait. Well I came across this recipe so I figured I would try it out and plus my husband kept telling me that he wanted something new! I changed it up a little and I call this a grown up version of rigatoni!



    INGREDIENTS:
    • 12 oz uncooked ziti. I used penna
    • 1 pound ground beef
    • 1/2 cup chopped onion
    • 1/2 teaspoon garlic
    • 1 jar (24oz) spaghetti sauce
    • 2 eggs, beaten
    • 1 carton (15 oz) ricotta cheese
    • 2 1/2 cups shredded mozzarella cheese
    • 1/2 cup grated parmesan cheese

    DIRECTIONS:
    1. Cook pasta according to package directions. Meanwhile, in a large skillet, brown the ground beef, onion and garlic until it is in longer pink. Stir in spaghetti sauce
    2. In a bowl, combine eggs, ricotta cheese, 1 1/2 cups mozzarella cheese and parmesan cheese. Pour cheese mixture over cooked pasta.
    3. Spoon 1/3 of the meat mixture on the bottom of a 13x9 pan. Top with half of the pasta, repeat layers until you end with meat mixture on top.
    4. Cover and bake at 350 for 40 minutes. Uncover and sprinkle remaining mozzarella cheese and bake 5 to 10 more minutes or until cheese is melted.

    Recipe #92 Loaded Baked Potato and Chicken Casserole

    My friend posted a status on her Facebook page that she was making a loaded baked potato and chicken casserole for dinner. I thought that sounded amazing so I did some research and came up with my own version of this recipe. It does take some take to make but if you have leftover bacon or chicken that will make it easier on you!




    INGREDIENTS:
    • 4 russet potatoes, peeled and cubed
    • 4 uncooked chicken breasts, cubed
    • 1 cup of cooked bacon, crumbled
    • 1/2 cup onion, chopped
    • 2 cups cheddar cheese
    • 4 green onions, sliced
    • 1/3 cup heavy cream
    • 2 tablespoons butter, melted
    • 1 teaspoon garlic
    • 1/4 teaspoon salt
    • pinch or two of pepper

    DIRECTIONS:

    1. Preheat oven to 350. Grease a 13x9 pan and set aside.
    2. Combine the potatoes, chicken,bacon, garlic, salt, pepper and onion in pan.
    3. Pour cheddar cheese, heavy cream and butter over top and mix.
    4. Cover with foil and bake for 55 minutes. Remove foil and continue baking in 10 minute intervals until the chicken is cooked through and the potatoes are soft but not mush.
    4. Sprinkle with green onions, mix and serve!

    Recipe #91 Eggnog Pancakes

    This recipe is prefect for a snowy day or even Christmas day! Who doesn't love pancakes or eggnog? So combining them is an excellent idea and it is 3 simple ingredients.



    INGREDIENTS:

    • 2 cups of Bisquick
    • 1 1/2 cups of eggnog
    • 1 large egg

    DIRECTIONS:

    1. Mix all the ingredients together.
    2. Heat a griddle or a pan on the stove with butter or oil. Pour the desired amount of batter and bake on one side until you see bubbles and flip over. Continue to cook on the other side until it looks firm or you can use a tooth pick and check the center to make sure it comes out clean.

    Recipe #90 Raspberry Pudding Shots

    It has been a long time! But now with the wedding and holidays over I have more time to now post all the recipes I have been collecting for you! This recipe is prefect for a holiday get together or a party that you maybe planning. Think super bowl party! My friend made a version of these shots for my bachelorette party and I really liked it so I made it for my other friend for her bachelorette party!





    INGREDIENTS:
    • 1 small box instant cheesecake pudding
    • 1 cup milk     
    • 1/2 cup raspberry liqueur
    • 1/4 cup vodka
    • 1 8- oz container of cool whip, thawed             
                                                             
                                                                         
               
    DIRECTIONS:
    1. Add cold milk to instant pudding and mix until smooth
    2. Add both liqueur and vodka and keep mixing
    3. Fold in cool whip
    4. Pour into shot glasses and freeze or store in the refrigertor

    Recipe #89 Pumpkin Cheescake Trifles

    Here is another dessert in wine glasses that I made for my friends bridal shower! These went like hot cakes! I made 60 of different flavors and they were all gone! They are also very easy to make!




    Makes 4-6 glasses
    INGREDIENTS:
    12 Biscoff cookies, crushed
    1tablespoon butter, melted
    8 oz cream cheese, softened
    1 cup pumpkin
    1 teaspoon vanilla
    1/2 cup sugar
    2 teaspoon pumpkin pie spice
    1 (12 oz) Cool Whip, Thawed and divided


    DIRECTIONS:

    1. Combine Biscoff cookies and butter. Set aside
    2. In a large bowl, beat the cream cheese until smooth. Add pumpkin, vanilla, suagr and pumpkin pie spice.
    3. Fold in half (6oz) of Cool Whip

    To assemble:
    Place Biscoff cookies on bottom, spoon pumpkin mixture on top then top of with some more Cool Whip!
