Recipe #51 Beef Burgundy

I made this last night for dinner and it turned out great! I have never used a Dutch oven before but they are amazing! The meat is so tender and it cooks recipes like a slow cooker but faster!





INGREDIENTS:

  • 6 slices of bacon, diced
  • 2 pounds boneless beef, cubed
  • 1/3 cup flour
  • 14 oz beef broth
  • 1 cup burgundy or dry red wine
  • 3 carrots, cut in 2 inch pieces
  • 2 onions, cut in wedges
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1/4 teaspoon pepper
  • 8 oz mushrooms, sliced

DIRECTIONS:

  1. Cook bacon until crisp in Dutch oven, remove and set aside.
  2. Toss meat in flour, brown on all sides in bacon drippings.
  3. Add broth, wine, carrots, onion, garlic, seasonings, and bacon. Bring to a boil, reduce heat. Cover and simmer for 1 1/2 hours or until meat is tender.
  4. Add mushrooms, cook uncovered for 30 more minutes.
  5. Serve with noodles, or mashed potatoes!
