INGREDIENTS:
- 6 slices of bacon, diced
- 2 pounds boneless beef, cubed
- 1/3 cup flour
- 14 oz beef broth
- 1 cup burgundy or dry red wine
- 3 carrots, cut in 2 inch pieces
- 2 onions, cut in wedges
- 1 clove garlic, minced
- 1 teaspoon salt
- 1 teaspoon thyme
- 1/4 teaspoon pepper
- 8 oz mushrooms, sliced
DIRECTIONS:
- Cook bacon until crisp in Dutch oven, remove and set aside.
- Toss meat in flour, brown on all sides in bacon drippings.
- Add broth, wine, carrots, onion, garlic, seasonings, and bacon. Bring to a boil, reduce heat. Cover and simmer for 1 1/2 hours or until meat is tender.
- Add mushrooms, cook uncovered for 30 more minutes.
- Serve with noodles, or mashed potatoes!
