Recipe #3 Pita Chips and Hummus Dip

I was grocery shopping with my friend Janelle last week and I asked her what she was going to make for dinner. She was making a Lasagna with pita chips as a side. I was like pita chips? So I started doing some research and made my own version of pita chips and I decided to make a Hummus dip to go along with it! It is real simple and does not require a lot of extra ingredients. Hope you like!

Recipe for the Pita Chips:

INGREDIENTS:

  • 4 pita bread pockets (I used wheat ones)

  • 1/2 cup olive oil

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon garlic

  • 1/2 teaspoon salt

  • 1/2 teaspoon dried parsley flakes

  • 1/2 teaspoon oregano flakes

  • DIRECTIONS:
    1. Preheat oven to 400 degrees F.
    2. Cut each pita bread into 8 triangles. Place triangles on a cookie sheet that is lined with wax paper.
    3. In a small bowl, combine the oil, pepper, garlic, and salt. Brush each triangle with oil mixture.
    4. Combine the parsley and oregano and sprinkle over the oiled pitas.
    5. Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy.

    Recipe for Hummus:

    INGREDIENTS:

  • 1 (15 ounce) can garbanzo beans ( chick peas), drained, but save liquid in a bowl

  • 2 teaspoons ground cumin

  • 1/2 teaspoon salt

  • 1/8 teaspoon garlic

  • 1 tablespoon olive oil

  • DIRECTIONS:

    1. In a blender or food processor combine garbanzo beans, garlic, cumin, salt and olive oil. Blend on low speed, gradually adding reserved bean liquid, until desired consistency is reached.

    Enjoy!!!
