Recipe #1!!! Rocky Road Brownies... Yum!


So I decided that the first recipe I put on my blog should be something easy and something that everyone loves... lots and lots of chocolate!!



INGREDIENTS:

  • 1/2 cup unsalted butter, soften
  • 1 1/2 cups chocolate chips (set 1/2 cup aside for topping)
  • 1/2 cup white sugar
  • 1/2 cup of packed brown sugar
  • 1/2 teaspoon salt 
  • 2 large eggs
  • 3/4 cup all purpose flour
  • 1 1/2 cups mini marshmallows
  • 1/3 cup chopped walnuts (optional)... I made mine with nuts!
  • 1/4 cup m&ms


DIRECTIONS:
  1. Preheat oven to 350 degrees. Spray an 8-inch-square baking pan with non-stick cooking spray like Pam! (Maybe thats why I like to cook, I mean they have a cooking spray named after me and all!) 
  2. In a double boiler* combine butter and 1 cup of chocolate chips. Heat, stirring occasionally so it doesn't burn and just until melted, 3 to 5 minutes.
  3. Remove mixture from heat; stir in sugars and salt, then eggs, then flour. After it is mixed together stir in with a spoon the chopped walnuts. Spread batter evenly in prepared pan. Bake 30 to 35 minutes.
  4. Remove from oven, and sprinkle with marshmallows. Bake for about 5 minutes or until the marshmallows are puffed. Take them out of the oven and sprinkle with the m&ms immediately. Met the remaining 1/2 cup of chocolate chips in the double boiler and drizzle over the brownies!
  5. Let them cool completely before you cut, I was so excited to try one I cut them when they were still warm and needless to say I made a big mess!

* Side Note-  You ask what is a double boiler? Well let Pam the cooking dictionary tell you! A double boiler is a specialized piece of kitchen equipment consisting of two fitted saucepans. The larger saucepan is partially filled with water that you bring to a simmer or boil. The inner saucepan uses this indirect heat to melt chocolate cook custards and sauces, or even melt wax for candlemaking.
