Recipe #19 Homemade Tagalongs

One of my favorite cookie recipes is the girlscout cookie, the tagalong. Well for some reason this year I didn't have anybody ask if I wanted to buy some... So I set my search out to find a copycat recipe for them! This is what I came up with.












INGREDIENTS:

  • 2 sticks butter
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1/2 teaspoon salt
  • 3 cups flour
  • 1/2 cup peanut butter
  • 1/2 cp powdered sugar
  • 2-3 cups chocolate chips (milk chocolate)
DIRECTIONS:

1. Beat softened butter and sugar together. Add 1 egg and then vanilla. Next add the salt and then the flour.
2. Put wax paper down and form the dough into a cylinder like this:









3. Place the cylinder formed dough into the freezer for 25 minutes.
4. Slice the dough into thin disks. (The cylinder should make 60 cookies, only cut 30 because the peanut butter mixture is only for 30 cookies, if you would like to make only 60 double the peanut butter, powdered sugar, and chocolate). Freeze the remaining dough until another time.
5. Bake at 350 for 8 to 10 minutes. Place the cookies onto a cooling rack until they are cooled completely.
6. Mix together the peanut butter and powdered sugar.
7. Melt the chocolate in a double boiler, which is 2 pots that sit onto of each other. In the bottom pan fill it with a little water and bring it to a boil. Then fill the top pan with the chocolate and melt it.
8. Press the peanut butter mixture on each cookie.
9. Dip each cookie in the chocolate and cover completely and place on a piece of wax paper.
10. Feeze them until they are hard!
