Recipe #72 Chocolate Cupcakes with Raspberry Buttercream Frosting

I made these for my dad for father's day but I lost the recipe after I made it... well I was cleaning and finally found it again!!! It is a really good chocolate cupcake... very moist and the raspberry buttercream frosting is to die for. Prefect for a summer dessert!






INGREDIENTS:

For cupcake:
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup cocoa powder
  • 1/2 cup oil
  • 1 cup water
  • 1 teaspoon vanilla
  • 1 tablesppon vinegar
For Raspberry Buttercream:
  • 3/4 cup shortening
  • 1/4 cup butter
  • 7 to 8 teaspoons of water (depending on how thick you want the frosting)
  • 1 teaspoon vanilla
  • 1 (16 oz) package powdered sugar
  • 1/2 cup fresh raspberries

DIRECTIONS:

  1. Mix all ingredients for the cupcakes together until moist and well blended.
  2. Preheat oven to 350.
  3. Bake cupcakes for 20- 25 minutes.
  4. For frosting, mix everything (except the powdered sugar and raspberries.)
  5. Add powdered sugar, then raspberries.
